Observed cut tomatoes (54F - Cold Holding) inside reach in cooler at preparation area on top of others containers. As per chef for approximately 1 hour prior, coached him on correct procedures.

  • 16-62-1:Intermediate - No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine.
