Also observed sliced turkey (48F - Cold Holding) in standing reach in cooler across from ice machine. As per operator and label since Sunday 01/05 Operator discarded the sliced turkey.

Also observed lettuce (49F - Cold Holding) in reach in cooler at front counter preparation table. As per operator for less than 3 hours. Also observed sliced ham (51F - Hot Holding); sliced turkey (48F - Cold Holding); cooked roast beef (46F - Cold Holding) in standing reach in cooler across from ice machine. As per operator the sliced ham and roast beef for less than 3 hours. Operator moved items to reach in freezer for rapid cooling. As per operator and label the sliced turkey since Sunday 01/05 Operator discarded the turkey.
