- 06-09-1:Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed Commercially processed fish in ROP not removed from packaged, as per manager fish was recently taken out of the walk inc cooler, manager removed fish from package on site. **Corrected On-Site**
- 08A-20-5:High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. In the walk in cooler observed raw chicken stored over steak. Instructed manager to reorganize raw food products. **Corrective Action Taken**
- 03A-03-5:High Priority - Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. shell eggs (87F - Cold Holding), on the shelf above the reach in cooler located at cook line, manager transfered eggs to reach in cooler to rapidly cool. **Corrective Action Taken**
- 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the walk in cooler observed Raw chicken (47F - Cold Holding); ham (46F - Cold Holding), as per manager products were outside earlier less than 3 hours. Instructed manager to add ice on product to help to rapidly cool. **Corrective Action Taken**
