Observed pasteurized eggs (49F - Cold Holding) at single door reach in cooler at preparation area. As per manager product was at room temperature for preparation for approximately 30 minutes.

Observed establishment utilizing time as a public health control for pastries and soup. As per manager items were placed under time 1 hour prior.
