  • 09-01-4:High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Operator handling ready to eat sauce with bare hands and sauce is not getting heated to 145F. Operator washed hands and placed gloves on to continue working with ready to eat sauce. Also, observed employee cutting melon without wearing gloves and melon not being heated to 145F.
