- 16-22-4:Intermediate - - From initial inspection : Intermediate - No dishwashing facilities of any kind provided. Establishment using a dish machine for their ware washing. Per operator the motor to the dish machine is broken and they do not have any other dish machine or three compartment sink on site. Operator states the motor broke approximately three to four weeks ago and they are waiting for approval for either repairs or the purchase of a new dish machine. Warning - From follow-up inspection 2023-10-30: Per operator the motor has been replaced and after running machine multiple times the quaternary ammonium sanitizer tested at 150ppm, however max temperature of machine only reaching 91F and operator states that their technician told them that the machine only sanitizes and does not have a wash or rinse cycle. Inspector noticed machine pulling sanitizer solution from bulk container, but no solutions being pulled from bulk containers of dish detergent and rinse solution. Establishment also has 2 residential Bosch dishwashers in break rooms but both machines max temperature only gets to 91F. Inspector discussed with operator about replacing dish machine or adding a three compartment sink. Admin Complaint
