Establishment has no approved Alternative Operating Procedure. Observed employee make bare hand contact with lettuce and pickles while replenishing the container with his right non-gloved hand. Inspector spoke with employee who washed hands and put on gloves.

Employee indicated machine has been inoperable for a few days. **Corrective Action Taken**
