- 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. cream cheese (50F - Cold Holding); sour cream (48F - Cold Holding) items in flip top reach in cooler with other items that are cooked/cooling for 30-35 minutes, spoke to operator about placing cooked/cooling items in ice bath before placing in cooler so cooling items may not possibly affect other cold holding items.
