  • 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed: on the front line: tuna 50, salmon 49°. Fish package is cut open, and placed in a room temperature bowl to be broken up. Then placed in a small room temperature bowl for front line service.
