Observed : on the cook line, flip top make table next to the grill: pasta 51°, shredded cheese 49°,cheese sauce 44°. These were stocked after lunch, 1:45 or so. The grill next to this unit creates lateral heat. Items were moved to the walk-in cooler and iced bagged.
