- 03B-01-6:High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed at steam table shredded beef at 125°F. As per cook the item was cooked early in the morning approximately 2 hours previous the inspection was conducted. The shredded beef was removed and reheated to reach the proper temperature. The steam table also was adjusted to reach 135 for hot holding.
