Also, soda plate at dining room soda dispenser with mold like substance buildup

Grease buildup on hood filters of right sided cookline.

High Priority – Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit

Gravy at 120F. Person in charge discarded. Corrective Action Taken

High Priority – Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet

Backflow preventer in incorrect location at mop sink. Needs to moved to non chemical side of splitter with red hose attached. nAlso, observed person in charge utilizing hose by placing in backed up mop sink with no air gap between dirty water and hose.

High Priority – Wastewater on ground of establishment

At the time of inspection observed wastewater backing up from mop sink and leaking under mop sink pan, pooling on floor in front of hallway with walk in cooler and walk in freezer. Person in charge purchased putty to temporarily seal mop sink until plumber can arrive later today. Seal is working at time of inspection. Maintenance on site by end of inspection. Corrective Action Taken Warning
