Observed dust and grease build up on the ceiling vents in the dishwashing area and kitchen hallway.

Basic – Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items

Basic – Ice buildup in reach-in freezer and/or walk-in freezer

Observed ice buildup on the exterior packaging of food in the inside and outside walk in freezers

Observed grease and food debris build up on the walls behind the flat top and fryer on the cook line.

High Priority – Single-use gloves not changed as needed after changing tasks or when damaged or soiled

Observed employee storing food outside and touching exterior doors and then change tasks to handle clean equipment without changing gloves or washing hands

Operator had employee wash hands and change gloves. Corrective Action Taken

High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit

Observed on front cook line: Shredded cheese (50F – Cold Holding); Sliced tomatoes (50F – Cold Holding); Raw shell eggs (Ambient 50F – Cold Holding).nOperator stated they had been in the reach in cooler for approximately 2hrs

Observed employee using hand wash sink to fill up a container
