Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.Observed dishwashing machine chlorine at 0ppm. High Priority – Raw animal food stored over/not properly separated from ready-to-eat food. Observed smoked salmon over beans in walkin cooler. Manager rearranged food items to prevent cross contamination. Corrected On-Site
