nObserved birria (48°F – Cold Holding); carnitas (50°F – Cold Holding); fajitas (46°F – Cold Holding) stored in walk in cooler. Per operator, employees were in and out of walk in cooler while putting away delivery items; foods out of temperature for approximately 3 hours.
