Ice buckets for East bar in ware washing area not stored inverted.

Basic – Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly.

Basic – Single-service articles not stored inverted or protected from contamination

Single service to go pans not inverted for protection. Manager stored properly. Corrected On-Site

High Priority – Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly

Dish machine is currently sanitizing at 0 ppm chlorine. Manager was aware and is conducting sanitization in three compartment sink at 200 ppm quaternary.

High Priority – Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb

Mop sink behind beer walk in cooler in storage area lacks a vacuum breaker.
