Basic – Opened employee beverage container in a cold holding unit with food to be served to customers.

High Priority – Food/ice received from unapproved source/no invoice provided to verify source. See Stop Sale. Alcapurria, wrapped in wax paper, no labeling. Advised to refrain from serving until he can prove he bought from approved source as he told me.

High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Raw Chicken holding 42-44f. Advised cold holding in shallow pans. Cooler also appears to be jammed packed full.

High Priority – Warewashing sanitizing solution exceeding the maximum concentration allowed. Tested at 200-300 ppm, advised less chlorine, add more water. Now tested at 100 ppm. Corrected On-Site

Intermediate – Handwash sink not accessible for employee use at all times. Dishes and other utensils etc covering handwash sink basin.

Intermediate – No paper towels or mechanical hand drying device provided at handwash sink.advised to move to sink area. Corrected On-Site

Intermediate – Packaged food not labeled as specified by law. Product identity/description, date product was packaged and name and address of the establishment that prepared and packaged the food.

Intermediate – Raw/undercooked animal food offered and establishment has no written consumer advisory. Raw animal foods must be fully cooked prior to service. Advised to put consumers warning on menu. Copy of verbiage was given to operator.
