Basic – Equipment and utensils not properly air-dried – wet nesting. Observed metal pans wet nesting on shelf above prep table across from convection oven. Warning

Basic – In-use knife/knives stored in cracks between pieces of equipment. Observed in-use knife being stored in crack between prep table and wall in prep kitchen. Operator had knife washed and sanitized during inspection. Corrected On-Site Warning

Basic – In-use tongs stored on equipment door handle between uses. Observed tongs on equipment handle in prep area below waist level. Operator had employee remove tongs, place in dish area and replaced with clean tongs. Corrected On-Site Repeat Violation Warning

Basic – Old labels stuck to food containers after cleaning. Observed old label on clean metal container in walk-in cooler labeled hamburger, but, product was coleslaw. Operator changed container and had correct label placed on item. Corrected On-Site Repeat Violation Warning

High Priority – Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishwasher was at 0 ppm chlorine. Compared test strips with operator test strips. Operator stopped using dishwasher and set up three compartment sink until service repair person arrives and corrects sanitizer to proper level. Corrective Action Taken Warning

High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Raw chicken (47F – Cold Holding); Raw 10 oz sirloin (51F – Cold Holding) at 2 hours. Operator voluntarily discarded items. Warning

Intermediate – No soap provided at handwash sink. Observed no soap at hand washing sink on left side of dual sinks in woman's room. Operator refilled soap during inspection. Corrected On-Site Warning
