High Priority – Raw animal food stored over/not properly separated from ready-to-eat food. Raw bacon stored over halfnand half and ready to eat cut green beans in walk in cooler. As a repeat violation the importance of following proper protocol with this violation was reinforced with the operator. Repeat from 04-07-2023. Operator moved food to,proper storage. Corrected On-Site Repeat Violation

High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. butter (71 F – Cold Holding) on prep table. Per operator butter had been out less than 3 hours and was placed in cooler,to rapidly cool. Corrective Action Taken

Intermediate – Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Sour cream in walk in cooler not dated in walk in cooler

Intermediate – Handwash sink not accessible for employee use at all times. Hand sink at entrance to kitchen blocked by equipment

Intermediate – Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Cooked meatloaf, per operator removed from freezer but not labeled with date frozen nor date removed from freezer.
