Coils are iced up. Manager moved everything to the working drawer cooler. Sliced tomatoes 48 top row. Manager moved top two rows of sliced tomatoes to walk in cooler to cool quickly. Corrective Action Taken Warning

Intermediate – Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Tuna salad 47, chicken salad 48 at 4:15 pm as per manager prepared 3 pm second temperature at 4:50 pm tuna salad 48, chicken salad 48 . At this rate of cooling both would not reach 41 or colder within 4 hours. Manager moved both to working drawer cooler. Corrective Action Taken Warning

Intermediate – Probe thermometer not accurate within plus or minus 2 degrees Fahrenheit. Dial thermometer reading 20 f in ice water. Manager discarded the thermometer. Have another digital thermometer. Corrective Action Taken Warning
