Near fryers on cook line, two pans of chicken, one pan egg rolls 92F. Manager states items held on time, but no time mark or paperwork could be provided. Items cooked approximately one hour prior. Items placed back into fryers to be reheated. nIn walk in cooler, all TCS items 57F (chicken, beef, eggs, pork, shrimp). Manager states that walk in cooler compressor was freezing about an hour ago and maintenance company had turned off walk in cooler for that hour to repair. Inspector confirmed ambient temperature is 40F from fan blower. Door will be kept closed to keep temperature dropping. Corrective Action Taken Warning
