Intermediate – Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection…observed at 1:30 portioned with plastic bags ham 49°, portioned turkey 51° in a deeper that four inches container at walk in cooler . Took another temperature at 2.00 pm it was same temperature at 49°, 51° . Manager replace food in sheet tray at time of inspection. Corrective Action Taken
