Cleaned stacked pans on storage shelf near prep area unable to properly air dry

Handles on lids at flip top reach-in cooler in front service area missing.

Basic – Floors not maintained smooth and durable

Multiple areas of sealed concrete floor on cook line chipped/ in disrepair/ not smooth and durable.

Basic – Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust

Gaskets on reach-in cooler in prep area soiled

Also, gasket on walk-in cooler soiled.

Basic – Wiping cloth sanitizing solution other than chlorine, quaternary ammonia or iodine, not at proper minimum strength, not used according to label instructions

Sanitizer Bucket (Smartpower 0) on cook line. Observed bucket to low to come up hose. Operator changed out bucket and remade sanitizer solution and retested at 4.5 Corrected On-Site

High Priority – Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet

Vacuum breaker missing from non chemical side of splitter at mop sink

Intermediate – Food-contact surface soiled with food debris, mold-like substance or slime

Portable cutting board in prep area soiled/stained

Also, underside of latte beverage machine soiled. Repeat Violation
