Intermediate – No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine.n Observed: lack of an irreversible registering temperature indicator for the hi+temp dish wash machine. A yellow thermometer was used, but it could not hold the hi temp at that time. The Manuel was googled for this device, and instructions were retrieved. Corrective Action Taken
